2 oz Cutty Sark Scotch

½ teaspoon chai simple syrup (recipe below)

2 dashes Angostura bitters

Orange peel for garnish
Stir the chai syrup into the Scotch in a double rocks glass and add two dashes of Angostura bitters. Add ice and garnish with an orange peel.
Chai simple syrup: Mix 1 cup of water with 1 cup of turbinado sugar in a pot. Bring to a boil. Add 6 Celestial Seasonings Bengal Spice or other chai tea bags and steep for 5-6 minutes. Remove tea bags. Cool. Store syrup in fridge.

1 ½ oz Del Maguey Vida Mezcal

¾ oz triple sec

½ oz agave syrup

½ oz tamarind puree (recipe below)

Lime wedge

Tajin for the rim
Rim a double rocks glass with tajin and fill with ice cubes. Fill a shaker halfway with ice. Combine all the liquid ingredients in the shaker and shake vigorously until well chilled. Strain, fill the glass and squeeze the lime wedge over the cocktail.
Tamarind puree: Mix 1 cup of Tamicon brand or other tamarind concentrate with 2 cups of water. Store puree in fridge.
